KALAKAND SWEET / MITHAI

 

 Kalakand is a famous Pakistani sweet or methai,this easy and instant recipe required just 3 ingredients. You can make this in microwave in 60 seconds. So don’t forget to try this delicious recipe.

INGREDIENTS:

Milk powder2 cups
Sugar 1/2 cup or to taste
Cream200 ml
Nutsas required

METHOD:

  • In a heat resistant bowl add powder milk, cream, sugar and mix well.
  • Microwave it for 30 seconds and mix, again microwave it for 30 seconds and mix. Do not over cook it will become hard.
  • You can cook on stove as well.
  • Line a pan with cling wrap and pour in it, sprinkle nuts on top and press with hands.
  • Keep it in refrigerator for 1/2 hour, cut pieces and serve.

ARIZONA CHICKEN STEAK

Try this delicious , juciy and creamy steak, you will definetly like it. I will dedicate this recipe to my student Naima Khalid, who gave this recipe to me.

CREAMY CHICKEN STEAK

INGREDIENTS:

Chicken fillets2 flattened
Saltto tatse
White pepper1/2 tsp
Black pepper1/2 tsp
Garlic paste1/2 tsp
Lemon juice1 tbsp
Worcestershire sauce1 tbsp
Oyster sauce1 tbsp
Chili sauce1 tbsp
Plain flouras required {for coating}
Butter2 tbsp
Parselyas needed
Garlic chopped1/2 tsp
Oilfor frying
White Sauceas needed
Saute Vegetabelsas needed

METHOD:

  • Marinate chicken fillet with salt, pepper, mustard paste, egg, garlic and lemon juice, oyster sauce, worcestershire sauce and chili sauce for 1/2 hour.
  • Coat fillets in dry flour and than dip in egg and shallow fry it.
  • Fry till tender but do not over cook.
  • Heat 1 tbsp butter in a pan add chopped garlic, parsely and 1/22 tsp white pepper. Stir and remove immediately and pour over chicken fillet.
  • Make a white sauce.
  • In a pan add 2 tsp butter and 1 tsp oil, heat and add 2 tbsp plain flour. Stir for few seconds.
  • Add salt and black pepper to taste and 3/4 cup milk. Stir till thick. You can add cheese too. (optional)
  • Pour a spoon full sauce on steak and serve.
  • Serve steak with Fried Rice and Saute vegetables.

CHICKEN CREAMY PIE

This recipe is very simple, You can make this pie with pizza dough or puff pastry. Flaky and crispy outside creamy and tasty filling inside will give you a very yummy feelings.

INGREDIENTS:

Chicken boiled and shredded 1 cup
Onion chopped1 medium
Butter1 tbsp
Black pepper1/2 tsp
Chicken powder1 tsp
Saltto taste
Red chili flakes1 tsp or to taste
Flour2 tbsp
Milk3/4 cup
Egg1 beaten
Sesame seedsas needed
Puff pastry or pizza doughas needed

METHOD:

  • In a pan add butter and onion, stir it for few seconds. Add flour and stir till raw smell remove.
  • Add chicken and mix well.
  • Now add chicken powder, salt, black pepper and crushed red chilies. Mix well.
  • Add chicken milk and stir well. Thick mixture will form.
  • Roll puff pastry or pizza dough.
  • Cut in squares.
  • Fold the corner and cut a strip as mentioned in pic.
  • Do this on opposite sides.
  • Place a spoon full of mixture in center and brush egg wash on all corners.
  • Overlap both sides.
  • Brush egg wash on top of pie, sprinkle sesame seeds.
  • Bake at 180c till done.

 

  • Enjoy with ketchup or ant sauce.

2 INGREDIENTS CHOCOLATE MOUSSE

 

Just 2 ingredients super easy and delicious Chocolate Mousse. No egg or no gelatin is required in this recipe, just whip cream and fold in melted chocolate to make a stunning desert for your special occasions.

Ingredients:

Cooking Chocolate / Milk chocolate 200g
Whipping cream2 cups

Method:

  • Add 1/2 cup cream in chocolate and microwave it. You can melt chocolate on double boiler too. Melt chocolate and mix well.
  • Now whip cream(in my cream vanilla and sugar was added). Whip cream till peaks form.
  • Fold chocolate in cream.
  • Fill in pipping bag and make small servings.
  • Dust cocoa and serve chill.

KARACHI FAMOUS STUDENT BIRYANI

 

Student Biryani is famous Birayni in Karachi. You can get similar taste at home too, if you are away from Karachi. This Recipe is inspired by Chef Shahid’s recipe.

INGREDIENTS:

Rice Basmati1/2 kg
Chicken 1/2 kg
Red chili powder1 tbsp
Black pepper1 tsp
White pepper1 tsp
Turmeric powder1 tsp
Chopped green chilies1 tbsp
Whole Spices Mix2 tbsp
Dhania powder1 -1/2 tbsp
Jaifal / Javtri powder1/4 tsp
Ajino moto (optional)1 tbsp
All spice powder1 tbsp
Cumin powder1 tbsp
Ginger garlic paste1 -1/2 tbsp
Zarda / orange food colour1/2 tsp
Kewra water1 tsp
Tomato paste4 tomatoes
Brown onion1 cup
Yogurt 1 cup
Green chillies3-4
Green coriander 1/2 cup
Min leaves1/2 cup
Biryani essence1/2 tsp

 

METHOD:

  • Soak rice for 20 minutes.
  • Boil rice and add salt, biryani essence, whole spices, Oil 2tbsp and vinegar 1 tbsp. Add rice and cook till half done . Now run cold water from rice to stop cooking process of rice.
  • Set aside.
  • You can cook Chicken gravy and than boil rice. Its up to you.
  • In a pot add 1 cup oil and add ginger garlic paste, saute for few minutes and add tomato paste.
  • Stir for few minutes and add chicken, stir.
  • Add salt to taste, Yogurt, red chili powder, ajino moto, cumin powder, coriander powder, turmeric powder, black pepper, white pepper, green chilli chopped, jaifal javitri, kewra essence, zarda colour, mix all well. let it cook for 5 minutes.
  • Add coriander and mint leaves and 1 cup water. Cook on high flame and add brown onion.
  • Cook till gravy become thick. Let water dry and add all spice powder and green chilies. Mix well. Do not over cook chicken.
  • Spread Boiled rice on top of gravy and cover with lid for 10-15 minutes.
  • Let it simmer on low flame.
  • Mix and serve with Raita and salad.

GUR KA SHARBAT / JAGGERY SUMMER DRINK

 

Gur ka Sharbat is one of a very famous drink here in Punjab. You can enjoy this anytime and quench your thrust. I am grateful to my two friends Alvina and Sadia , who told me this recipe. Try this in this hot Iftars.

INGREDIENTS:

  • Gur / Jaggery / shakar 1 cup
  • Water 1 cup
  • Lemon 1-2
  • Tukh Malanga/ Basil seeds as needed

METHOD:

  • Add water in jaggery. Leave it for few minutes and dissolve it.
  • Strain this solution. You can keep this in freezer for longer period of time.
  • Now add water according to your requirements and taste.
  • Soak basil seeds in water and leave it swell.
  • Add lemon juice and basil seeds in sharbat and serve chill with a lot of crushed ice.

KURKURAY CHANA CHAT/ BHEL

 

Kurkuray chaat is an Instant hit recipe. If you want something Chatpata and mazedar than try this recipe. You can use any flavor of Kurkuray and give a surprise to your guests.

INGREDIENTS:

  • Kurkuray (any flavor) 2 large packets.
  • Chickpeas Boiled 1 cup
  • Yogurt beaten 1 cup
  • Tomato cut in small cubes 1
  • Onion rings
  • Coriander leaves 2-3 tbsp
  • Green chilies 1-2 tbsp
  • Salt to taste
  • Chat masala as required
  • Tamarind Sweet sauce as required

METHOD:

  • Add salt in yogurt and mix well.
  • In a bowl add chickpeas , kurkure and toss them. Now pour yogurt on it.
  • Add onion rings, tomato, coriander, green chilies , sauce and chat masala.
  • Serve immediately, kurkure will become soggy with time.
  • Enjoy tasty Chat with family or friends.

CHEESE STICKS WITH GARLIC MAYO SAUCE

 

Crispy sticks with cheesy flavor you can add in your iftar menus or give your kids in lunch boxes. Make and store in freezer for a long time. Recipe is inspired by chef Shahid.

INGREDIENTS:

  • Bread slices as needed or 8 slices
  • Mozzarella cheese , grate it.
  • Black pepper 1/2 tsp
  • Green chili crushed 1 tsp
  • Coriander leaves 1 tsp
  • Chicken powder 1/2 tsp
  • Eggs 2 beaten
  • Bread crumbs as needed.
  • Make a paste of flour and water for sealing bread.
  • Ketchup for serving

METHOD:

  • Take fresh bread and with pin roll press it and remove edges.
  • Now in a bowl add all ingredients. and mix with light hands.
  • Beat eggs.
  • Place filling on bread and roll it. Seal with paste of flour and dip in egg. Coat crumbs and deep fry.
  • Do not fry on high flame.
  • Serve hot with Sauce.

 

GARLIC MAYO SAUCE:

INGREDIENTS:

  • Mayonnaise 2-3 tbsp
  • Vinegar 1 tsp
  • Freshly grind ginger garlic paste 1/2 tsp
  • Icing sugar 1/2 tsp
  • Mustard powder 1/2 tsp

METHOD:

  • Mix all ingredients and serve with sticks.

KATHIAWARI CHOLAY/ CHAT

 

This recipe of chat is one of the famous recipe of chat in Karachi. Last year I have tried it very first time. Now sharing this recipe in this Ramazan to add some flavor in your iftar. This recipe is taught by chef Shahid.

INGREDIENTS:

  • Chickpeas 1 cup
  • Mint leaves 2 tbsp
  • Coriander leaves 2 tbsp
  • Green chilies 1 tbsp
  • Yogurt 1 cup
  • Cumin seeds 1/4 tsp
  • Garlic 1 clove
  • Bread crumbs 4 tbsp
  • Tamarind 3/4 cup
  • Chat masala 1 tsp
  • Black salt 1tsp
  • Corn flour 4-5 tbsp.
  • Oil 2-3 tbsp
  • Salt to taste
  • Red chili powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Ajino moto/ chicken powder/ chicken cube 1 tbsp
  • Yellow food color/ zarda color 1/4 tsp
  • Onion Rings
  • Papri

METHOD:

  • Boil chickpeas by adding salt and ginger garlic paste 1 tbsp in water. Cook till soft and tender. Leave 1-2 cups of water of boiled chickpeas.
  • Make Raita first. Add yogurt, green chilies, mint leaves, coriander, Cumin seeds 1/2 tsp, salt, garlic clove 1, bread crumbs in a grinder and make smooth paste. Set aside. Bread crumbs will give thickness to your raita.
  • Now Tamarind/Imli Chutney. Soak Tamarind in 4 glass water and remove seeds, strain and separate pulp. Now add chat masala and black salt. Mix well. Set aside. You can make this and keep it in freezer for a month.
  • In a pot add oil , cumin powder, turmeric, salt, red chili powder, coriander powder and ajinomoto. Stir well add few drops of water too. Now add chickpeas with 1 cup water. Add food color.
  • Mix food color in water and mix in chickpeas. Cook till become thick.
  • Now pour in serving dish, sprinkle onion rings, Raita, Chutney, Papri, Chat masala and serve it.

 

  • Yummmm.
  • Chat lovers you should try as soon as possible
